Peter’s Story

Peter is a 29-year-old from West Jutland. Before moving to Copenhagen, Peter worked as a chef and lived in Vancouver, but he decided to come back to Copenhagen to become a barista for The Coffee Collective. Today,  he helps the growing company to open up new shops around Copenhagen and he is overseeing  the trade with their coffee partners in Colombia. “Nowadays working with coffee can mean many things, but the approach that we try to promote is very niche-related. But Copenhagen is a great place to do this sort of business, because people are very curious. They have space in their lives to try out new things next to their work or own business affairs.”

For Peter, the most exciting thing about Copenhagen is the gastronomy scene and how fast it has developed in the past years. “The seeds planted back then have now established roots. Even though Copenhagen is fairly small and the population not so dense, the high living standard has made it possible to sustain an ambitious gastronomy scene. Especially with Noma and the whole New Nordic Food movement, things really started to go fast.” Now the city is full of amazing restaurants and bars and it is hard to keep up with all the new places opening every month.

Definitely Stefansgade in Nørrebro, where you have nice coffeeshops like The Coffee Collective and also cheap boutiques. And the Jewish Cemetery in Nørrebro is another secret gem of the city, the government is not allowed to do anything with it, so it is massively overgrown and just beautiful. One of the most beautiful places in Copenhagen for sure! 

The Best Restaurant

That’s tough, I would probably have to divide them into categories… Where I personally eat the most:  Manfreds – really good, affordable and simple food. Great wine! The best food experience: Amass – amazing food, great team and an inspiring chef who focuses on sustainability. If you want to go all out: Noma.

The Perfect Night

My perfect night would be in Norrebro, my favorite neighborhood of Copenhagen. I would go to Mikkeller & Friends for some speciality beer. For dinner, I would head to BÆST, an amazing Italian restaurant. Afterwards a drink at The Barking Dog or the cocktail bar Ruby

Freetown Christiana

Norrebro and Nordvest are ethically rich areas with lots of interesting young people, families, musicians and artists. So, I would go and hang out there, have a chat at the local Shawarma places. The coffee chain I work for, Coffee Collective , is also a great spot to meet people. And for sure – Christiana. It’s for both Copenhagen and the world an interesting spot. It really brings something to the table – that mentality, that mind set, and that structure of a society.

I am very much into the architecture side of things, so I love going to the Thorvaldsen Museum. If you have some more time, go see Louisiana which is a little bit outside the city. It’s an amazing place, just beautiful – a maze of interesting pieces and art and the architecture is brilliant!
